First-year students in the Master's program of Mediterranean Agronomy spent an engaging day in the course "Chemistry, Sensory Evaluation and Microbiology of Wines." They had the opportunity to visit two university-industry cooperations in the Trilj area: CEKOM 3ILJ located in the business zone and Krolo Winery in Strmendolac. At CEKOM’s laboratory, students participated in exercises of the above course, given by lecturers Marko Šuste and Tomislav Svalina, as well as experts from Croatian Agency for Agriculture and Food.
"Chemistry of wines involves studying chemical composition of wine, which is crucial in its production. Sensory evaluation builds on wine chemistry and ultimately is the most important aspect for end consumers. One cannot exist without the other, along with microbiology; without these, high-quality, healthy, and stable wine cannot be produced," explained lecturer Šuste. He emphasized that food production, or agriculture, is the foundation of any society and therefore has no alternative - it must be one of main drivers of the country's economic development.
During the visit to Krolo Winery, its owner, Dražan Krolo, introduced the students to systems and technologies involved in grape growing and winemaking, as well as the tradition of vine cultivation and production in that region.
